The restaurant offers the perfect combination of high quality ingredients such as selected DOP and IGP products and Tuscan delicacies. The aim is to recover and rediscover the dishes of ancient tradition, the authentic flavors of the past and not lose them. Galileo has always offered its customers the products of the territory under the banner of simplicity and genuineness, favoring quality, seasonality and freshness.

The art of fresh handmade pasta
The Galileo Restaurant staff produces fresh handmade pasta every day, thanks to Enzo artisan of pasta. They dedicate an offer hard to find today in the restaurant business. In our menu you will find proposals for typical local dishes that bring us back to our ancient tradition such as: tripe alla Pisana, cod with tomato and Toscanelle olives, stockfish with potatoes and ribollita concluding with marinated cod and classic Tuscan crostini with liver paté.
The experience guarantees the quality of the products both for the different types of fresh pasta, filled and not, and for the continuous conservation and transmission of the recipes.

For the lunch break we offer a great choice of dishes to our guests, every day different dishes based on the chef’s imagination. The dining room and the food also make it the perfect restaurant for business dinners and important events such as birthdays, baptisms and graduations in the center of Pisa.
The restaurant is near the Tower of Pisa, Piazza dei Miracoli and the famous Piazza dei Cavalieri (the place where the Scuola Normale di Pisa is located). The staff is at your disposal to create the perfect menu, a menu suited to the tastes of your guests and suitable for the occasion to celebrate.
